Almost every New York diner and deli has this breakfast item. This isn’t authentic unless the bagel is actually from New York (the best in the world, of course), but you can use bagels from any state or region. While this looks simple, the ingredients create a complex but delicious breakfast.

INGREDIENTS
4oz (110g) cream cheese, softened
2 tbsp capers, drained, plus extra
4oz (110g) sliced smoked salmon
2 plain bagels, split and toasted
1 medium red onion, thinly sliced
freshly ground black pepper
lemon wedges
DIRECTIONS
1 Layer an equal amount of cream cheese, capers, and smoked salmon on each bagel half.
2 Sprinkle a few extra capers over the top of each bagel, add an equal amount of onion to each bagel, and season each bagel with pepper. Serve immediately with lemon wedges.
