Almost everyone loves mashed potatoes, but it doesn’t always fit into your personal or training diet. This recipe is super easy to make and is a great and healthy alternative to high-fat mashed potatoes. This side also comes in handy when you need to keep your carb intake low.

INGREDIENTS
1 medium head of cauliflower, trimmed and cut into small florets
1 tbsp extra virgin olive oil
salt and freshly ground black pepper
DIRECTIONS
1 Fill a large pot three-fourths full with water. Place the pot on the stovetop over high heat and bring the water to a boil. Add the cauliflower and cook until tender, about 10 minutes.
2 Drain all but 1⁄4 cup of the cooking liquid and transfer the cauliflower to a food processor. Add the olive oil and reserved water 1 tablespoon at a time and purée until smooth. (You can use a potato masher instead.)
3 Transfer the cauliflower mash to a serving bowl, season with salt and pepper, and serve immediately.
