INGREDIENTS
8 cups 2% milk
1 cup uncooked long- or whole-grain rice
3 large eggs, yolks only, beaten
3⁄4 cup granulated sugar
1⁄2 tsp pure vanilla extract
DIRECTIONS
1 In a pot on the stovetop over medium heat, combine the milk, rice, egg yolks, and sugar. Bring to a boil and cook until thickened and the rice is tender, about 20 to 25 minutes, stirring frequently.
2 Remove the rice mixture from the stovetop, stir in the vanilla, and allow to cool slightly.
3 Spoon an equal amount of pudding into 8 dessert dishes and chill for 2 to 3 hours before serving.
