INGREDIENTS
1 cup cooked barley
1 cup cooked red quinoa
1 cup cooked faro
1⁄4 cup toasted chopped walnuts
1⁄4 cup roughly chopped pistachios
1⁄4 cup golden raisins
1⁄4 cup fresh pomegranate seeds
4 scallions, thinly sliced
1⁄4 large red onion, minced
2 celery stalks, finely diced
4 cups mesclun greens
4 radicchio leaves, chopped
1 medium avocado, cubed
for the dressing
1⁄2 cup extra virgin olive oil
5 tbsp red wine vinegar
1 tsp sweet mustard
salt and freshly ground black pepper
DIRECTIONS
1 In a bowl, combine all the ingredients except the mesclun greens, radicchio, and avocado.
2 In a bowl, make the dressing by whisking together the olive oil, vinegar, and mustard. Season with salt and pepper. Drizzle just enough dressing over the ingredients to moisten them. (Cover and refrigerate the remaining dressing until ready to serve the salad.)
3 Top the salad with the mesclun greens, radicchio, and avocado. Drizzle the remaining dressing over the top and serve immediately.
