This recipe originated while taking the train into Manhattan for sparring sessions at the famed Gleason’s Gym in Brooklyn. I’d take a juice made from carrot, apple, and ginger for the commute. And now you can take this colorful and nutritious juice with you anywhere.

INGREDIENTS
1⁄2 head of cauliflower
8 carrots
2 golden beets, peeled
2 red-skinned apples, cored
1⁄2-inch (1.25cm) piece of fresh ginger
DIRECTIONS
1 In a pot on the stovetop over medium heat, cover the cauliflower with water. Bring to a boil and cook for 1 minute. Plunge the cauliflower into a bowl of ice water to stop the cooking process.
2 Cut all the ingredients to allow them to fit into the juicer chute. Place the carrots and beets in the juicer and process them before adding the cauliflower, apples, and ginger. Juice until only the pulp remains.
3 Pour the juice into 2 chilled glasses and serve immediately.
