This is one of my oldest snacks, which I enjoyed throughout my time in college and graduate school. I used to wrap these in aluminum foil and bring them to class and to the gym every single day. They’re loaded with fast-digesting carbs, delicious peanut butter, and crisp green apple.

INGREDIENTS
2 tbsp all-natural peanut butter, divided
2 rice cakes
1 green apple, thinly sliced
2 tsp ground cinnamon, divided
DIRECTIONS
1 Spread 1 tablespoon of peanut butter on each rice cake.
2 Arrange an equal amount of apple slices on top of the peanut butter for each rice cake.
3 Sprinkle 1 teaspoon of cinnamon over the top of each rice cake and serve immediately.
