As far back as I can remember, my grandfather used to make this simple salad fresh from his garden each and every day during the summer months. I have fond memories of watching him assemble and enjoy this salad. And I’m excited to share this experience and recipe with you.

INGREDIENTS
8oz (225g) cherry tomatoes, halved or quartered
1 large seedless cucumber, sliced and quartered
1⁄4 medium red onion, thinly sliced
1 tsp finely chopped fresh oregano
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
salt and freshly ground black pepper
DIRECTIONS
1 In a serving bowl, combine the tomatoes, cucumber, onion, and oregano. Drizzle the olive oil and vinegar over the top, gently tossing to coat and evenly distribute the ingredients.
2 Cover and refrigerate until ready to serve. Season with salt and pepper before serving.
