INGREDIENTS
2 tbsp extra virgin olive oil
2 tbsp minced fresh garlic
3lb (1.4kg) butternut squash, peeled and cut into 1-inch (2.5cm) cubes
sea salt and freshly ground black pepper
1⁄3 cup grated Parmesan cheese
2 tbsp minced fresh parsley
DIRECTIONS
1 Preheat the oven to 400°F (204°C).
2 In a bowl, combine the olive oil and garlic. Add the squash, season with salt and pepper, and toss to coat.
3 Transfer the squash to an ungreased baking dish and bake uncovered for 45 to 50 minutes.
4 Remove the squash from the oven, sprinkle the cheese and parsley over the top, and serve immediately.
