INGREDIENTS
12 slices thick-cut bacon
12 large eggs
salt and freshly ground black pepper
6oz (170g) shredded sharp Cheddar cheese
2 tbsp sliced chives
DIRECTIONS
1 Preheat the oven to 325°F (163°C). Spray a muffin pan with nonstick cooking spray.
2 Cut the bacon slices in half and line each cup of the muffin pan with two pieces. Crack an egg into each cup and season with salt and pepper. Bake until the eggs firm up, about 12 minutes.
3 Remove the egg cups from the oven and preheat the oven to broil. Sprinkle the cheese over the top and broil until the cheese has melted, about 2 minutes.
4 Remove the egg cups from the oven, sprinkle the chives over the top, and serve immediately.
