Every time I’d see this on a menu while dining out, I’d have to order it. I decided I needed to figure out how to prepare it myself. This crispy yet juicy cod dish has a tremendous amount of flavor and a mouthfeel that’s sure to impress any dinner guests you might be hosting.

INGREDIENTS
3 tbsp white miso paste
2 tbsp mirin
2 tbsp sake
1 tbsp water
1 tsp packed light brown sugar
unsalted butter
2 cod fillets, about 7oz (200g) each
DIRECTIONS
1 In a skillet on the stovetop over medium heat, whisk together the miso paste, mirin, sake, water, and brown sugar until the mixture simmers and thickens slightly, about 1 to 3 minutes. Remove the miso mixture from the stovetop and allow to cool completely.
2 Place the fillets on the baking pan and brush with the miso mixture. Rest the fillets at room temperature to marinate, about 15 to 20 minutes.
3 Move an oven rack to about 6 inches (15.25cm) from the heat source and preheat the oven to broil. Line a baking pan with aluminum foil and lightly grease the aluminum foil with butter.
4 Place the pan in the oven and broil for 5 minutes. Turn the pan 180° and broil until the fish flakes easily with a fork, about 5 minutes more.
5 Remove the fish from the oven, remove the pin bones from the fish, and serve immediately.
