INGREDIENTS
1lb (450g) shrimp, peeled and deveined
1 tbsp curry powder
1 tsp ground cayenne pepper
1 tsp paprika
salt and freshly ground black pepper
2 tbsp coconut oil
DIRECTIONS
1 In a bowl, combine the shrimp, curry powder, cayenne, and paprika. Season with salt and pepper, tossing to coat.
2 In a cast iron skillet on the stovetop over medium-high heat, heat the coconut oil until shimmering. Add the shrimp and cook until firm, about 21⁄2 minutes per side.
3 Remove the shrimp from the skillet and serve immediately.
