I created this recipe by accident when I ran out of marinara sauce to make my turkey version of sloppy joes. Now I have a barbecue turkey dish that my nephews love. Because this sauce is considerably sweeter than marinara, you can eat the meat on a crispy romaine leaf.
Makes: 5 servings
Serving size: 5oz (140g) meat and 2 lettuce leaves
Prep time: 15 minutes
Cook time: 10 minutes
INGREDIENTS
1lb (450g) lean ground turkey (99%)
1 green bell pepper, chopped
1 medium red onion, chopped
1 tomato, diced
1 cup barbecue sauce
1 tsp red pepper flakes
freshly ground black pepper
1 romaine heart
DIRECTIONS
1 In a nonstick skillet on the stovetop over medium heat, cook the turkey, pepper, onion, and tomato until the turkey is crumbly and no longer pink, about 5 minutes.
2 Stir in the barbecue sauce and red pepper flakes. Season with pepper. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
3 Remove the turkey from the stovetop. Place 2 romaine leaves each on 5 plates, add an equal amount of turkey to each, and serve immediately.
