I love this for a pre-workout snack (plus a black coffee!) because it’s high in carbs and moderate to low in fats and protein—with carbs being the preferred energy macro for high-intensity work. The sweet dried cherries are complemented by the crunchy almonds.
Makes: 6 squares
Serving size: 1 square
Prep time: 5 minutes
Cook time: 45 minutes
INGREDIENTS
2 cups old-fashioned oats
1⁄2 cup dried cherries
1⁄2 cup sliced almonds
1⁄4 cup packed dark brown sugar
1 tsp ground cinnamon
1⁄2 tsp salt
1⁄2 cup agave
2 tbsp melted coconut oil
1 tsp pure vanilla extract
1⁄4 tsp almond extract
DIRECTIONS
1 Preheat the oven to 300°F (149°C).
2 In a bowl, combine all the ingredients and stir until moistened. Spread the mixture onto a baking pan lined with parchment paper and bake until golden, about 45 minutes.
3 Remove the granola from the oven and allow to cool before cutting into six equal-sized squares and serving. (The granola will gain a crunchy texture as it cools.)
Store the granola squares in an airtight container at room temperature for up to 3 weeks.
