My desire to help my family members eat incredibly nutritious and healthy sardines inspired me to create and perfect this dish. Searing the fish makes them crispy, and combining citrus from the lemon and heat from the red pepper flakes makes this an even more delicious treat.

INGREDIENTS
1 tbsp extra virgin olive oil
1 garlic clove, chopped
1⁄2 tsp red pepper flakes
grated zest and juice of 1 lemon
240g sardines in oil, drained
1 tbsp chopped fresh parsley
8 endive leaves
4 slices brown bread, toasted
2 tsp capers, divided
DIRECTIONS
1 In a frying pan on the stovetop over high heat, heat the olive oil until shimmering. Add the garlic and red pepper flakes and sauté until the garlic is shiny but not browned, about 2 minutes.
2 Add the lemon zest and sardines and cook until warm, about 3 minutes. Remove the sardines from the stovetop, sprinkle the parsley over the top, and drizzle the lemon juice over the top.
3 Place 2 endive leaves on each slice of bread, add an equal amount of sardines and capers on top of each crostini, and serve immediately.
