INGREDIENTS
1 head of romaine, chopped
1 medium red onion, thinly sliced
6oz (170g) pitted black olives
1 green bell pepper, chopped
1 red bell pepper, chopped
2 large Roma tomatoes, chopped
1 medium cucumber, sliced
1 cup crumbled feta cheese
for the dressing
6 tbsp extra virgin olive oil
3 tbsp red wine vinegar
1 tsp dried oregano
juice of 1 lemon
freshly ground black pepper
DIRECTIONS
1 In a bowl, combine the romaine, onion, olives, bell peppers, tomatoes, cucumber, and feta.
2 In a separate bowl, make the dressing by whisking together the olive oil, vinegar, oregano, and lemon juice. Season with pepper.
3 Drizzle the dressing over the salad, toss to coat, and serve immediately.
