1lb (450g) flank steak
1 cup frozen corn kernels, thawed
1⁄2 cup chopped fresh cilantro
2 tbsp minced red onion
2 tbsp freshly squeezed lime juice
1 tbsp extra virgin olive oil
1⁄2 tsp cumin
1⁄8 tsp salt, plus extra
1⁄8 tsp ground black pepper, plus extra
15oz (420g) black beans, rinsed and drained
6 fat-free flour tortillas
3⁄4 cup shredded Monterey Jack cheese with jalapeño peppers
DIRECTIONS
1 Heat the grill to medium.
2 Place the steak on the grill, season with salt and pepper, and cook to your desired doneness:
