Instead of being drenched in butter, these carrots are tossed in a lightly sweet honey sauce. Quick steaming the carrots helps preserve vitamins and antioxidants.

1lb (450g) carrots, peeled and chopped into bite-sized chunks
2 tsp coconut oil
1 tbsp honey
Kosher salt
1. Place the steam rack in the inner pot, and add the carrots and 1 cup water.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam, and set the cook time for 4 minutes. When the cook time is complete, quick release the pressure.
3. Open the lid. Transfer the carrots to a medium bowl and set aside. Carefully remove the inner pot from the base, drain the water, and return the inner pot to the base.
4. Select Sauté, and add the coconut oil and honey to the inner pot. Heat until the glaze begins to sizzle.
5. Add the cooked carrots back to the pot, and season with a pinch of kosher salt. Toss gently to coat the carrots in the glaze.
6. Transfer to a serving bowl and allow to cool for 5 minutes before serving. Serve warm.
