This lighter spin on a classic street snack cuts the fat way back. Corn contains plenty of fiber plus the antioxidant lutein, which helps promote healthy vision.

4 medium ears corn, shucked
4 tsp nonfat Greek yogurt
2 tsp mayonnaise
1⁄4 tsp kosher salt
1⁄4 tsp Freshly ground black pepper
2 tbsp chopped fresh parsley
1⁄4 cup crumbled feta cheese
1. Place the steam rack in the inner pot, and add 1 cup water. Place the corn in the pot.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High), adjust the mode to Normal, and set the cook time for 5 minutes.
3. While the corn is cooking, make the sauce by combining the Greek yogurt, mayonnaise, kosher salt, pepper, and parsley in a small bowl. Stir well to combine.
4. When the cook time for the corn is complete, quick release the pressure, remove the lid, and transfer the corn to a serving plate.
5. Top each ear with 2 teaspoons of the sauce, and sprinkle the feta over top. Serve hot.
