This healthier take on sausage with peppers and onions is one of my favorite go-to dinners. Serve with brown rice or whole grain pasta for a quick and satisfying meal.

2 tsp olive oil
12 oz (340g) fully cooked, Italian-style chicken sausage, sliced into 1⁄4-inch (.5cm) pieces
2 green bell peppers, seeded and sliced
1 large red onion, sliced
1⁄2 cup canned diced tomatoes
1⁄4 tsp kosher salt
2 tsp chopped fresh thyme
2 tbsp chopped fresh parsley
1. Select Sauté, and add the olive oil to the inner pot. Add the sausage and sauté for 2–3 minutes, or until the sausage begins to brown.
2. Add the peppers, onion, tomatoes, kosher salt, and thyme. Stir well.
3. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 5 minutes. When the cook time is complete, quick release the pressure.
4. Open the lid, stir, and allow to cool slightly before transferring to a serving bowl and topping with the chopped parsley. Serve warm.
