2 cups long grain brown rice, rinsed and drained
1 tsp kosher salt
21⁄4 cups water
1⁄2 cup chopped fresh herbs (parsley and tarragon recommended)
2 tsp freshly grated lemon zest
1. Add the rice, salt, and water to the inner pot. Cover, lock the lid, and flip the steam release handle to the sealing position.
2. Select Pressure Cook (High), and set the cook time for 22 minutes. When the cook time is complete, allow the pressure to release naturally (about 12 minutes).
3. Remove the lid and transfer to a serving bowl. Add the herbs and lemon zest, mix well, and then fluff with a fork. Serve hot.
