This sweet and tangy jam has a third of the sugar found in most jams. It’s lovely slathered on warm biscuits, mixed into yogurt, or used in salad dressings or marinades.

4 cups diced fresh pineapple
1⁄4 cup evaporated cane sugar
Juice of 1 lime
1. Combine the pineapple, sugar, and lime juice in the inner pot. Stir gently.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 1 minute. When the cook time is complete, allow the pressure to release naturally (about 15 minutes).
3. Remove the lid and stir. (If a smoother jam is desired, use an immersion blender to blend the ingredients until a smooth texture is achieved. If a thicker consistency is desired, select Sauté and simmer until the jam thickens [about 10 minutes], and then select Cancel to turn off the heat.)
4. Transfer to a large, sealable glass jar and allow to cool completely before sealing. Store in the refrigerator for up to 1 week.
