This elegant, delicate treat is high in fiber, low in sugar, and ready in about 30 minutes. Substituting fruit juice for sugar helps keep the sugar content low.

3 cups 100% apple or white grape juice
Juice of 1 lemon
1 cinnamon stick
1 whole star anise
31⁄2 cups water
4 pears (Anjou or Bartlett varieties)
1. Combine the fruit juice, lemon juice, cinnamon stick, star anise, and water in the inner pot.
2. Peel the pears, but leave the stems on. Immediately place the pears in the liquid. (If there’s not enough liquid to cover the pears, add more water, one tablespoon at a time, until the liquid completely covers the pears.)
3. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 6 minutes. When the cook time is complete, allow the pressure to release naturally (about 10 minutes).
4. Using a slotted spoon, carefully transfer the pears to a serving platter. Serve warm, or transfer the cooled pears to a sealable container and chill in the refrigerator for a minimum of 3 hours before serving.
