This lighter, lower carb alternative to mashed potatoes is every bit as savory and satisfying, and features protein-packed Greek yogurt in place of sour cream.

1 head cauliflower, trimmed and chopped into small florets (about 5 cups)
1 tbsp vegetable oil spread
2 tbsp plain 2% Greek yogurt
3⁄4 tsp kosher salt
1⁄4 tsp freshly ground black pepper
1. Place the steam rack in the inner pot. Add the cauliflower and 1 cup water.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High), and set the cook time for 4 minutes. When the cook time is complete, quick release the pressure.
3. Remove the lid, and transfer the cauliflower to a large bowl. Carefully remove the inner pot from the base, drain, and return to the base.
4. Select Sauté, and add the vegetable oil spread, cooked cauliflower, Greek yogurt, kosher salt, and pepper to the inner pot. Sauté for 2 minutes.
5. Using a potato masher, mash the ingredients until a smooth consistency is achieved, and no large lumps remain.
6. Transfer to a serving bowl. Serve warm.
