This is quite possibly the easiest—and tastiest—beef stew you’ll ever make. Instead of flour, this recipe features gluten-free tapioca to help thicken the sauce.

1lb (450g) beef brisket, trimmed and cut into 2-inch (5cm) cubes
1 tsp kosher salt
2 tsp dried thyme leaves
1⁄2 tsp freshly ground black pepper
1⁄2 tsp garlic powder
1 yellow onion, roughly chopped
4 large carrots, peeled and cut into large chunks
2 medium turnips, peeled and cut into large chunks
1 tsp Worcestershire sauce
1⁄2 cup low-sodium beef broth
1 tbsp tomato paste
2 tbsp instant tapioca
1. Add the brisket to the inner pot, followed by the kosher salt, thyme, pepper, garlic powder, onion, carrots, turnips, Worcestershire sauce, beef broth, tomato paste, and tapioca. Stir well to combine.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 35 minutes. When the cook time is complete, allow the pressure to release naturally for 10 minutes, and then quick release the remaining pressure.
3. Remove the lid, stir, and allow the stew to cool slightly before ladling into serving bowls. Serve warm.
