12 organic plum tomatoes
1 tbsp olive oil
2 cups From-Scratch Chicken Stock or low-sodium chicken stock
1 clove garlic
1⁄2 tsp kosher salt
1⁄4 tsp freshly ground black pepper
1⁄4 cup half & half
1 cup fresh basil leaves
1. Combine the tomatoes, olive oil, chicken stock, garlic clove, kosher salt, and pepper in the inner pot.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 8 minutes. When the cook time is complete, allow the pressure to release naturally for 10 minutes, and then quick release the remaining pressure.
3. Remove the lid, and add the half & half and basil. Using an immersion blender, purée the ingredients until a smooth consistency is achieved and no lumps remain.
4. Ladle the soup into serving bowls. Serve hot.
