6oz (170g) 70% cacao dark chocolate, chopped
1⁄4 cup heavy cream
For serving:
12 medium strawberries
2 bananas, thickly sliced
1 cup animal crackers
2 clementine oranges, segmented
1. Place the steam rack in the inner pot, and add 1 cup water to the bottom of the pot.
2. Fill two medium ramekins each with 3 ounces (85g) of the chocolate, and 2 tablespoons of the heavy cream. Loosely cover each ramekin with aluminum foil, and place on the steam rack.
3. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 5 minutes. When the cook time is complete, quick release the pressure.
4. Remove the lid. Using tongs, carefully transfer the ramekins to a serving platter, remove and discard the foil, and gently stir until the ingredients are well blended.
5. Serve warm, with fresh fruit and animal crackers served on the side, and bamboo skewers for dipping.
