Cherries jubilee traditionally is served over ice cream, but this sweet and tangy sauce is served over fat-free vanilla frozen yogurt to create a light and delightful dessert.

1lb (450g) frozen cherries
2 tsp vegetable oil spread
3 tbsp light brown sugar
Pinch kosher salt
1⁄4 cup water
2 tsp cornstarch
2 tbsp brandy
2 tsp lemon juice
6 cups fat-free vanilla frozen yogurt
1. Combine the cherries, vegetable oil spread, brown sugar, kosher salt, and water in the inner pot. Stir gently.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 5 minutes. When the cook time is complete, quick release the pressure.
3. Remove the lid. Select Sauté, and bring the ingredients to a simmer.
4. While the cherries are coming to a simmer, combine the cornstarch and brandy in a medium bowl. Mix well.
5. Add the cornstarch mixture to the pot and simmer for an additional 3–5 minutes, or until the mixture thickens. Once the mixture has thickened, press Cancel to turn off the heat, and add the lemon juice. Mix well, and allow to cool slightly.
6. Add 3⁄4 cup of the frozen yogurt to a serving bowl, and top with 1⁄4 cup of the cherries. Serve warm.
